Homemade Peppermint Marshmallows

Serves: 40 mini marshmallows
  • 3 tablespoons gelatin
  • 1½ cups sugar
  • ¾ cup light corn syrup
  • ¼ cup honey
  • ¼ teaspoon kosher salt
  • 2 teaspoons peppermint extract
  • 1 cup cold water, divided into two parts
  • 1 cup powdered sugar
  • red food coloring (liquid works better, Wilton gel didnt work as well)
  • 4 ounces good chocolate for melting
  • crushed candy canes
  1. Place gelatin and ½ cup cold water in bowl of stand mixer fitted with whisk attachment (this allows the gelatin to bloom).
  2. In a heavy bottom sauce pan, mix together sugar, salt, corn syrup, honey and ½ cup water.
  3. Stir the mixture and heat to a temperature of 240 degrees. Remove from the heat.
  4. Turning the stand mixer on medium speed and begin whisking gelatin. Slowly stream in sugar mixture.
  5. Add in peppermint extract
  6. Continue whisking until light, fluffy, and tripled in volume; about 15 minutes.
  7. Line a baking sheet with parchment paper. Dust it with powdered sugar.
  8. Evenly spread marshmallow into the pan.
  9. Drop 8 drops of red food coloring onto the top of the marshmallow. Use a toothpick or wooden skewer to swirl the food coloring.
  10. Allow to set for a minimum of one hour.
  11. Remove from pan and cut into desired shape.
  12. Dust with more powdered sugar, dip in melted chocolate (if desired) and sprinkle with crushed candy canes.
