Red White & Blue Popsicles

Serves: 10 popsicles
- 2 cups fresh raspberries
- 2 tablespoons granulated sugar
- ¼ cup water
- 1 (13ounce) can light coconut milk
- 2 cups fresh blackberries
- 2 tablespoons granulated sugar
- ¼ cup water
- Using a high speed blender, puree the raspberries, granulated sugar and water until smooth.
- Pour equal amounts into the popsicle molds.
- Place in freezer for a minimum of 30 minutes.
- Pour the coconut milk over the raspberry layer and allow to freeze for 30 minutes.
- Using a high speed blender, puree the blackberries, granulated sugar and water until smooth.
- Pour equal amounts of the blackberry puree over the coconut milk layer.
- Freeze for a minimum of two hours.
- Release from mold and enjoy.
