Red White & Blue Popsicles

Ingredients
  • 2 cups fresh raspberries
  • 2 tablespoons granulated sugar
  • ¼ cup water
  • 1 (13ounce) can light coconut milk
  • 2 cups fresh blackberries
  • 2 tablespoons granulated sugar
  • ¼ cup water
Instructions
  1. Using a high speed blender, puree the raspberries, granulated sugar and water until smooth.
  2. Pour equal amounts into the popsicle molds.
  3. Place in freezer for a minimum of 30 minutes.
  4. Pour the coconut milk over the raspberry layer and allow to freeze for 30 minutes.
  5. Using a high speed blender, puree the blackberries, granulated sugar and water until smooth.
  6. Pour equal amounts of the blackberry puree over the coconut milk layer.
  7. Freeze for a minimum of two hours.
  8. Release from mold and enjoy.
