Banana Oat Nut Muffins

Ingredients
  • ⅓ cup melted coconut
  • ½ cup honey (or maple syrup)
  • 2 large eggs, at room temperature
  • 1 cup packed mashed ripe bananas (about 3 bananas)
  • ¼ cup milk (I use non fat dairy milk)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla bean extract
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1¾ cups whole wheat flour (AP flour like King Arthur works great)
  • ½ cup old-fashioned oats, plus more for sprinkling on top
  • ¼ cup chopped pecans, plus more for sprinkling on top
Instructions
  1. Preheat oven to 325 degrees Fahrenheit. Line muffin tin with baking cups.
  2. In a large bowl, use a hand whisk, to combine coconut oil and honey until mixed well.
  3. Add the eggs and bananas and mix well.
  4. Next, mix in the milk, baking soda, vanilla, salt, cinnamon, flour, oats and pecans. Mix to combine, being sure not to over-mix!
  5. Divide the batter between the 12 muffin cups evenly.
  6. Sprinkle tops of muffins with old-fashioned oats and chopped pecans.
  7. Bake for 12-15 minutes until done.
  8. Allow to cool and enjoy :)
