Pumpkin Spice Chocolate Chip Cookies

Ingredients
  • 8 tablespoons unsalted butter, at room temperature
  • ¾ cup light brown sugar
  • ½ cup granulated sugar
  • ⅓ cup pumpkin puree (not pumpkin pie puree)
  • 1 whole egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 2 cups all purpose flour
  • 1¼ cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  2. Using a stand mixer with a paddle attachment, cream together butter and sugars until light and fluffy (about 5 minutes).
  3. Add in pumpkin puree, egg and vanilla extract. Mix until combined.
  4. Sift in flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Mix into the wet ingredients. Do not over mix.
  5. Fold in the mini chocolate chips.
  6. Place the refrigerator for 1 hour, to chill.
  7. Using a small ice-cream scoop (1 tablespoon dough per cookie), scoop dough onto baking sheet.
  8. Bake for 12-14 minutes until golden. The cookies will continue cooking outside the oven
  9. Allow to cool completely
