Walnut Chocolate Chunk Cookies

Ingredients
  • 12 tablespoons unsalted butter, melted and cooled
  • ¾ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 whole egg
  • 1 teaspoon vanilla extract
  • 1¾ cups all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup roughly chopped raw walnuts
  • 1 cup chocolate chunks
  • ½ tablespoon malden sea salt, optional
Instructions
  1. Preheat oven to 350 degrees.
  2. In a stand mixer, using a paddle attachment, cream together butter and sugars.This process takes 3-5 minutes.
  3. Add in the egg and vanilla and mix well.
  4. Sift in flour, baking soda and baking powder. Mix into the wet ingredients. Do not over mix.
  5. Fold in the chocolate chips and chopped walnuts.
  6. Using a size 40 ( 1½ tablespoon) icecream scoop dough onto a parchment lined baking sheet.
  7. Sprinkle tops of cookies with flake salt.
  8. Place the refrigerator for 10 minutes to chill.
  9. Bake for 12-14 minutes until golden. The cookies will continue cooking outside the oven
  10. Allow to cool completely.
